I am always looking for flavorful marinades to jazz up my weeknight meals and this is one of my favorites. This sweet and spicy Asian-inspired marinade is a perfect match for thin, quick cooking pork chops but would be equally delicious paired with chicken breasts or thighs, or some extra firm tofu or tempeh for a vegetarian main!
I paired this simply with some roasted broccoli for a super simple midweek meal. You can also use the leftovers (this recipe makes 8 thin pork chops, a total of 1 pound of meat) for the star of a delicious and super fast and easy stir fry!
I grilled these on my smokeless indoor grill (a godsend for cold February winters and for apartment dwellers like me!) for just a few minutes on each side. Add some steamed jasmine rice or cauliflower rice to round out the meal and have dinner on the table in 30 minutes or less!
If you have the recipe, I encourage you to make the entire marinade recipe it could easily double as a stir fry sauce or for extra to drizzle over rice and/or veggies!
hoisin marinated pork chops.
ingredients
1 pound thin boneless pork chops (8 chops)
1/4 cup gluten free hoisin sauce (Joyce Chen makes a good one)
1/4 cup teriyaki sauce
2 tablespoons coconut aminos or low sodium soy sauce
2 tablespoons rice vinegar
2 tablespoons raw honey
1 tablespoon minced garlic
1 teaspoon minced ginger
directions
Whisk together all ingredients except for the pork in a small bowl until well combined and honey is incorporated. Pour 1/2 cup into a large resealable bag or a glass dish. Reserve remaining marinade (about 1/4 cup).
Add pork to marinade, seal or cover and let marinade in refrigerator for a maximum of 30 minutes, turning once to cover the pork.
Preheat grill to medium-high heat. Remove pork and discard marinade. Grill chops for 2-3 minutes per side, or until done, basting with reserved marinade.
Garnish with sliced scallions if desired.
