HAND UP if youve ever been intimidated by trying to host a breakfast or brunch get together because of the fact that pancakes cook one at a time sooo slowly and you were afraid to burn the bacon and set off the fire alarm?! I used to think putting out a bunch of breakfast food all at once and making it look pretty was just impossible. Can cooked eggs even look appealing? However, with some tried and true recipes and a few purchased items, you can put out this amazing breakfast spread in under an hour! Its perfect for hosting a special event with family and friends, or just for your family on the weekend to have a little something extra special! Heres how!
The trick to a beautiful breakfast spreads is to pre-purchase some items that will fill up your board, and fill up your company. We recommend purchasing: fresh fruit of your choice, muffins, croissants, lunch meat, cheese and yogurt. This is a huge time saver and fills up the board so nicely!
TIP: To save yourself some time the morning of, you can make our favourite homemade granola recipe in advance and your strawberry squeezer juice.
GRANOLA RECIPE
2 cups of oats
1 1/2 cups mixed nuts and seeds
1 cup flaked coconut
1 cup dried fruit
1/2 tsp cinnamon
1/2 tsp nutmeg
1/3 cup maple syrup
1/3 cup coconut oil
Preheat oven to 325 F
Combine oats, mixed nuts and seeds , cinnamon, nutmeg and HALF amount of flaked coconut
Mix in maple syrup and coconut oil.
If you find granola too dry you can add more syrup
Spread in a thin even layer on a baking sheet lined with parchment paper.
Bake for 12 minutes, remove/stir bake for another 10-15 minutes.
Monitor granola to avoid burning.
Let granola cool completely and place in an air tight container.
All that is left now to do the morning of your breakfast is make the bacon, eggs, pancakes, and juice! The way I like to get started when Im cooking the morning of is to preheat the oven for the bacon (375F!) YES, I cook my bacon in the oven. Have you tried it? Its a GAME changer. First of all, it cooks evenly, second of all, no splatter on the stove and frees up a space on your stove so you can cook your pancakes! Once the oven is preheated, you can place the bacon on a cookie sheet with parchment paper. Try not to let any bacon overlap so that it can cook evenly. Use two trays if you need to depending on how much bacon you cook. For extra flavour, sprinkle it with brown sugar for a candied bacon taste! Put in the oven for 20-25 minutes. Check to see how its cooking, if you prefer a little crisper just give it a few extra minutes of cook time!
PANCAKE RECIPE
Next up, start to prepare your pancake recipe!
1 cup flour
1 tspn baking powder
2 tbls brown sugar
3/4 cup milk
1 beaten egg
2 tbls melted butter
1 tsp vanilla
Combine all dry ingredients, mix well.
Add egg, butter, milk and vanilla.
Stir.
Heat pan on low sprayed with coconut oil cooking spray or melted butter.
Wait until bubbles form on top of pancake and flip.
REMEMBER: BE PATIENT! SLOW AND STEADY WINS WHEN IT COMES TO DELICIOUS PANCAKES!
TIP: Use two burners to cook a few pancakes at one time to go faster!
EGGS
The trick to making eggs that look nicer than scrambling them is to create a very thin omelette. Whisk 3 eggs, a splash of cream, and a sprinkle of salt together in a bowl. Grease a small pan with coconut spray and a little olive oil. Put it VERY low and let the pan heat up. After a minute, add the eggs to the pan and cover with a lid. The eggs cook SUPER slowly. Youll know its time to turn them over once you dont see any liquid on the top anymore. It will start to look like an egg pancake and youll be able to life the sides up! Pick the pan up, hold the lid over it and flip so that the egg is on the lid. Now you can slide the omelette back into the pan to cook on the other side. The eggs dont burn, and they come out in one whole circle so you can cut into slices and its much easier to serve this way! See our YouTube video if you need a visual for this recipe!
STRAWBERRY SQUEEZER JUICE
Next thing to do is make your juice! If you want, this can also be done in advance (night before even!)
5 oranges
5 apples
strawberries
Juice together oranges and apples.
Place in blender with strawberries and blend together.
Keeps inrefrigeratorfor 2-3 days
Putting it all together
We love to put all of these items on a charcuterie board to make it look more appealing!
