Happy Wednesday! Im back with another meal prepping post, but its one of my favorite + most requested posts to share with yall! I know how hard it is to dig through endless amount of recipes on Pinterest, figuring out if its tasty enough or if its even something that will keep/store well to be meal prepped. What Im Meal Prepping:
Breakfasts: Homemade McMuffins + Green Apples
Herb + Parmesan Crusted Chicken with Homemade Cranberry Sauce
Ham + Cheese Sliders with Mixed Veggies
Admittedly, the ham + swiss sliders might not exactly be the healthiest between salty lunch meat and dairy (both of which I try to avoid for the most part) but sometimes I just need to be able to throw a few simple ingredients into one pan and call it good. I mean hey, least I added some greens to it!
The chili is one of my favorite recipes though I make it every fall/winter because its so warm and comforting, and its full of good-for-you ingredients. If I didnt tighten up my grocery budget to make room for some Christmas shopping, I probably would have substituted the ground turkey for the ground Beyond Meat, but sometimes compromises must be made, and thats okay!!! This recipe should make a lot, too, so feel free to freeze part of it to thaw out when you need something home cooked + already put together. Just be sure to have a thermos or two on hand to comfortably travel with soup to work, school, or wherever it is youre going.
As for the homemade cranberry sauce, just yall wait. Ill be posting my recipe soon, in enough time for yall to add it to your own Thanksgiving menus. Ive made it for the last 3 or 4 Thanksgivings and my family and I have never looked back to the canned, jellied stuff. Nothing beats this recipe, and I am so excited to share it!
