Taco Mac and Cheese

Let me start by saying this: this is macaroni on steroids. It has ground beef it has ro-tel tomatoes and it has seasoning. It is the god send of macaroni and cheese. I actually have had this before and thought it would be a great meal if yall are looking to feed yourself for the whole week. It is a big dish but I dont think you can scale down all the ingredients that go into it. This makes for a perfect comfort food and is still good when you reheat. I strayed away from the recipe quite a bit and made it how I saw someone else make it. You can find the original recipe here, or you can try to follow along with mine.

Utensils you need

  • Tall Pot
  • Large stove top pan
  • Strainer
  • Medium sized mixing bowl
  • Large spoon
  • Knife
  • Measuring cups
  • Cutting board

Ingredients

  • 1 pound ground beef
  • 1 can ro-tel tomatoes (I used mild)
  • 2 cans of cheddar cheese soup
  • 1 can cream of mushroom soup
  • 1 tsp minced garlic (for this I purchased the jar of minced garlic)
  • 1/2 cup diced white onion
  • Chili powder
  • Salt and Pepper
  • 16 oz bag of Elbow macaroni
  • Bag of Taco seasoning shredded cheese

The process

Step one: Begin browning the ground beef in the pan.You can obtain this by cooking on medium heat and breaking it into fine bits with the spoon. Add onions and cook until meat is fully cooked. Drain and put into mixing bowl

Step two: Pour half the bag of macaroni into the pot and add water till it is 2 inches above the pasta. I made the mistake of using the whole bag and had too much pasta than I needed. Put on a burner and boil till ready.

Step three: In the same pan that we used to brown the beef, pour in the cream of mushroom, cheddar cheese soup, cream of chicken soup, and Ro-tel tomatoes. Stir and then add 1 tsp of minced garlic. Add chili powder and salt and pepper to taste and stir in.

Step 4: Pour ground beef into pan with the sauce and mix in. Drain water from pasta and incorporate it in spoonful by spoonful. Leave pan on low heat and stir for 5 minutes then serve.

Step 5: If you want more cheese, add grated cheese to the top once plated. You can never go wrong with too much cheese.

My rating:

I may be biased, but I give this a 9/10. Personally I think I may have found my favorite go-to dish. It makes a lot so be sure to have plastic containers on hand. Or you can just do what I do and feed 3 kids every time I make something. Im beginning to grow an audience in the dorm that waits for food to be done when they see me in the common room kitchen. At least my food isnt going to waste.

I can honestly say that I have improved as a cook from the start of this blog to now. I know more skills now then I did before. Now looking at recipes I dont think wtf is this telling me to do. I also think Ive gotten better at judging tastes and knowing what I need to add. Spices are my new favorite thing and I may do a post on all the spices you need to get ASAP. Next recipe is going to be a desert that I cannot wait to bake, Until then!
