Recipe adapted from One Green Planet
Looking for alternatives to processed meat substitutes. After the success of the Veggie Grounds, I wanted to try other versions. Though this recipe is vegan, I want to make a sausage patty for an egg sandwich which is not vegan. We’ll see how it goes…
Verdict: 5/10
Good start. The foundation is good and it was super fast to make. I’ll need to keep working on this recipe. First, next time I would pulse the walnuts first to make the pieces smaller and more uniform. Second, I would add more fennel and less red pepper flakes. I eyeballed the spices and I need to be a bit more precise next time. Heat was too strong and drowned out other flavors while the fennel was key to the flavor and I didn’t add enough. Will try it again.
Ingredients
- 1/2 C walnuts
- 1/4 C rolled oats
- 1/2 t chia seeds (soaked in 1/2 T water for 5 minutes)
- fennel
- paprika
- salt
- pepper
- Pinch of cumin
- pinch of red pepper flakes
- onion powder
- garlic powder
Instructions
Add all the ingredients to a food processor. (I tried a spice grinder for such a small amount but it didn’t work. Used the small food processor attachment to my blender.) Should come together like a thick batter. Form into a patty and fry until brown on both sides.
