Recipe: Hidden Veggie Meatballs

The weather is getting colder which means its time for lots of soups, pastas, and casseroles. One of my favorite things to eat is spaghetti and meatballs, and while I love a good frozen meatball, I love homemade ones even more. Here’s a recipe I like to make! It makes 32 meatballs, perfect for a dinner party or for yourself to eat throughout the week.

Ingredients:

  • 2lbs ground beef
  • 1 eggs
  • 1 tbsp Italian seasoning
  • 1 cup shredded carrots
  • 1 cup spinach
  • 1 cup bread crumbs
  • Salt and pepper

First Step: Preheat the oven to 400 degrees.

Second Step: Chop up your veggies. I like adding hidden veggies into my meatballs, and you will want to dice them up nice and small. They don’t add much flavor to the meatball hence why I call it hidden. I used my Ninja chopper to dice my veggies.

Third Step: Add all your ingredients into the bowl. Put in as much salt and pepper as you desire. No really as much as desire.

Fourth Step: Mash it all together. Yes with your hands… get dirty! It’s so much fun and if you have kids, get them to help too!

Fifth Step: Spray a pan down with your fav cooking spray. I prefer to use a mini cupcake pan for my meatballs, but a regular cookie sheet with foil on it works too!

Sixth Step: Roll the meat mixture into little balls. However big or small. The smaller they are the more you get, the larger… you get it. I prefer mine to be about an inch in diameter. But you do you boo.

Seventh Step: Place in oven for 7 minutes.

Eighth Step: Take out and flip the meatballs over. Put back in oven for another 5 minutes.

Last Step: Add to sauce or eat alone. Whatever you do…Enjoy!
