1 tsp olive oil 1 medium onion, chopped 1 medium red bell pepper, chopped 1 medium carrot, sliced 2 cloves garlic, finely chopped 1 Tbsp chili powder 2 cups low-sodium vegetable broth 1 (14.5 oz) can diced tomatoes 1 (15-oz) can kidney beans, drained, rinsed cup pure pumpkin puree 4 cups cubed raw pumpkin (-inch cubes) 1 lb ground turkey, beef or steak cubed 1. Brown ground turkey, beef or cubed steak until cooked thoroughly. 2. Add onion, bell pepper, and carrot; cook, stirring frequently, for 3 to 5 minutes, or until onion is translucent. 3. Add garlic; cook, stirring frequently, for 1 minute. 4. Season with salt and pepper if desired. 5. Add chili powder, broth, tomatoes, beans, beef or turkey and pumpkin; cook, stirring occasionally, for 15 to 20 minutes or until pumpkin is soft. You could also do this in a crock pot, which is what I will probably do! You could also leave out the meat to make a vegetarian version. Makes 8 1-1/2 cup servings.
