Yield: 12 muffins, 3 per person.

Per serving: 211 calories, 15g fat, 14.4g protein, 5.2g carbohydrate, 1.6g fiber, 3.6g net carbohydrate.

  • 4 eggs
  • ½  teaspoon baking powder
  • ½ cup of almond milk
  • ½  cup of almond flour
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon sriracha (optional)
  • 4 slices Black Forest ham lunch meat, cut into small pieces.
  • ½ cup of shredded mozzarella cheese.

Spray a 12 muffin pan with cooking spray and preheat the oven to 450 F.

In a bowl, combine the eggs, baking powder, almond milk, almond flour, salt black pepper, garlic powder and sriracha ( If using). Whisk well until combined. The mixture will have the consistency of heavy whipping cream.

On the bottom of the each muffin, sprinkle about a tablespoon of mozzarella cheese and pieces of ham. Equally divided the mixed batter between the 12 muffins.

Bake for 20 minutes at 450 F.
