Meat & Veggie Rice Paper Dumplings

You really can’t go wrong with dumplings. The filling in these can be modified to your dietary needs and preferred taste. When I cook I tend to not use measurements, I like to cook based on taste. I will however try and give you a generalization of measurement to experiment with yourself!

Ingredients:

  • Rice paper sheets
  • drizzle of olive or avocado oil for pan
  • 1 Lb of meat of choice ( I like ground chicken or pork, tofu and mushrooms work nicely as well)
  • a handful of shredded carrots
  • a handful of shredded cabbage (I grab the coleslaw mix and add more or less depending on who is eating)
  • 3 cloves of garlic
  • 3 green onions
  • 3 Tablespoons soy sauce (Add more or less depending on how your filling absorbs liquid)
  • small splash of sesame oil
  • 2 teaspoons of gochujang
  • splash of mirin
  • ground or fresh ginger to taste
  • salt and pepper

Recipe:

  1. Heat a large pan with a drizzle of oil of choice, add your ground meat. Stir until browned.
  2. Add in veggies and garlic, saute until softened
  3. Add in soy sauce, sesame oil, gochujang, mirin, ginger and salt and pepper. Stir till meat and veggies are coated
  4. Take mixture off the heat, add your green onion
  5. Prepare your rice paper folding station with a large dish of water, a damp towel to keep the rice paper from sticking to a dry surface, and a hot pad to put your filling pan on
  6. Follow directions on your rice paper packaging to soften, place wet rice paper sheet on your damp cloth and then fill the center with a rectangle of filling. I do about 1/4 a cup of filling in each dumpling
  7. To fold you’re going to bring the bottom part of the rice paper sheet up to cover the filling, then do the same with the top. Next, fold both sides over to create a rectangle.
  8. Wet your second rice paper sheet, place your dumpling seam down and fold again. Each dumpling will be wrapped in two papers to keep the filling secure.
  9. Repeat until you run out of filling
  10. Fry dumplings in your oil of choice, be sure to not let the dumplings touch. They will stick together and tear. Fry till golden brown on each side.
  11. Serve with dipping sauce! I LOVE sweet chili sauce with these, so delicious! Enjoy!
