Stuffed shells…the ultimate comfort food. I made this on an afternoon I wasn’t working and instructed my family to simply pop it in the oven 30 min before dinner time. Here’s the super simple recipe.
Ingredients:
Pasta/filling:
1 box of large shells
2 c shredded mozarella
15 oz ricotta cheese
1 c grated parmesean
1 package of frozen spinach
1 egg
1 T Italian seasoning
1t pepper
Meat sauce:
4 cups of pasta sauce
1 lb lean ground beef
1T italian seasoning
1t pepper
Topping
3 c shredded mozzarella cheese
Instructions
- Bring 8 cups of water to a boil with a pinch of salt and a dash of olive oil.
- Add pasta and cook till firm to the bite
- In another container: Thaw spinach and add cheeses, spices and egg. Combine.
- In a skillet, brown beef and add pasta sauce and spices.
- Assemble dish by adding a thin layer of pasta sauce to the bottom of your dish, fill shells with filling, cover with meat sauce. Top with cheese.
- Choose to make it now or later:
- Now: Bake at 350F for 25 minutes
- Later: refrigerate for up to 2 days and follow instructions as above.
- Later later: store in an airtight container and freeze for up to a month. Thaw for 24 h in the fridge and then cook for 40-50 min at 350F.
