I hope you all had a good week - mine was pretty good, we had a busy weekend last weekend, but I'm so excited it's finally December and we are getting closer to Christmas! 

ONE 
I did receive free admission to the PR event, everything else in this post I purchased
I had so much fun yesterday morning at the opening of the Nutcracker Immersive show in Calgary - I took the family and it was really cool! Both boys loved the show and the big screens were really great! Was a cute take on the show (I really wanted to see the Sugar Plum Fairy, but the kids liked the focus on the battle with the Rat King). Great introduction to the Nutcracker for those that aren't ready for the ballet!

TWO 


We spent last weekend getting a tree and getting set up for Christmas - it is one of my favourite things to do as a family, put on Christmas music, hang decorations, have treats, I just love it all! My shopping is almost done, a few last minute gifts, but we are getting close! Are you holiday ready yet? 

THREE 


I've been loving sharing more about me going vegetarian and I'm loving that you guys have been enjoying seeing all the recipes and veggie meal ideas! I'm not preachy about going vegetarian, but I do think everyone should reduce their meat consumption, so even if one day a week you want to do meatless Monday, hoping you will find some good suggestions! 
(Also, this month there are a few pescatarian meals in here as I eat fish and seafood once in a while!) 

-Thai One On soup (recipe from Big Oven) with homemade Best Damn Vegan Biscuit (from the Minimalist Baker)
-Tofu Katsu Curry (by Avant Garde Vegan, sooo good)
-Homemade Calzones
-Homemade Sushi with cucumber, avocado and shrimp tempura 
-Taco Salad in tortilla bowl with taco jackfruit
-Smashed Chickpea Salad (just like an egg salad, but chickpeas instead!)
-Butternut Squash Soup with Cornbread (recipe from Like Mother Like Daughter)
-Fall Harvest Bowls with Lentils, Quinoa, Sweet Potatoes, Turnips and a Tahini Dressing
-Toast with Hummus, Tomatoes, Sprouts and Balsamic Glaze
-Falafel and Pita with Greek Salad
-Avocado Toast with Sprouts
-Veggie Bites, Rice and Asparagus
-Mushroom Miso Pasta (recipe from Marion's Kitchen)
-Creamed Zucchini (recipe from Eat Something Vegan but I add lentils and more veggies!)

FOUR 


Pantone just announced their Colour of the Year for 2023 and I'm loving it - it's Magenta and it's lovely! I'm a huge pink fan and this is a bright, red pink and it's lovely! I'm always inspired by the Colour of the Year, although it honestly starts strong at the start of the year and peters off at the end, but I'm hoping I remember this one all through the next year! 

FIVE 


Okay, I thought this was pretty monumental this week, I reached my 100th book of the year! Woo hoo! I've been powering through audio books and physical and e-books this year too! I've read a little bit of everything and so excited to share my favourites with you later this month!
