Ingredients:
- 2 center-cut pork chops @ 2 inches thick
- Salt and black pepper, to taste
- ½ tsp Italian seasoning
- 3 thick-cut bacon
- 2 tbsp olive oil
- 1 tbsp unsalted butter
- 3-4 bunches scallions
- 4-5 crushed garlic cloves
- ¼ cup chicken broth
- 2 cups sugar snap peas
- Half a lemon
- Freshly chopped chives, to garnish
Directions:
Step 1
Season your meat with salt, pepper, and Italian seasoning, then pat them well into the meat, flip them over, and repeat seasoning the other side before setting them aside for later. Place a cast-iron skillet pan on a stove over medium-high heat, then heat up some oil before placing the chopped bacon, and then fry them until nice and crispy. Remove them from the oil and pan, then transfer them to a plate lined with a paper towel to drain off all the excess oil, and set them aside.
Step 2
In the same pan, add the pork chops, then sear it for about 3 minutes on each side until nicely browned, and set it aside on the same plate lined with a paper towel along with the fried bacon. Turn the heat to medium, then melt some butter, and add the chopped scallions tossing and cooking them well for about 3 minutes until golden. Add the crushed garlic, then give them a good stir, and cook for about 30 seconds or until aromatic.
Step 3
Pour the broth, then add the peas, and season them with salt and pepper. Stir them well, then turn the heat setting to low, and place the seared pork chop over the veggies. Place the lid on the pan, then turn the heat down to low, and let them cook for about 8 minutes. Squeeze half a lemon over the meat and veggies, then sprinkle the cooked bacon all over them followed by chopped chives, serve, and enjoy!
