These sweet potato fries are the easiest to make! And you can easily switch up the ingredients to make it your own. Here's what I included in mine below. I then made an easy (and optional) cilantro avocado sauce while the fries were baking!

  • frozen sweet potato fries
  • shredded cheese
  • black beans
  • red pepper
  • corn
  • green onions
  • jalapeno
  • cilantro

How to make loaded sweet potato fries

Wanna see how easy it is to make these loaded fries? Here are the steps below:

  1. Preheat oven to 450 F. Cook the sweet potato fries according to package directions.
  2. Meanwhile, prepare the toppings and chop the other veggies to top your fries with.
  3. Blend ingredients for avocado cilantro sauce in a food processor, blender or Magic Bullet.
  4. Remove fries from the oven and top with cheese. Return to oven and broil for 2-3 minutes until cheese is melted.
  5. Add toppings, then serve and enjoy!

I made these fries vegetarian so that you don't have to cook any meat and can reduce your prep time, but you can easily cook up some ground beef or chicken with taco seasoning to add some more protein to these fries.

Making the cilantro avocado sauce

This green sauce is SO easy to make and any leftovers will last in the fridge up to 3 days, so it's perfect for snacking on after you've made this recipe. It's super healthy and low calorie to boot! Here's what you need to make it below. Just add everything to a food processor, blender or Magic Bullet mini blender and you're good to go.

  • 1 ripe avocado
  • 1/2 cup cilantro, chopped
  • 1/2 cup sour cream
  • 1 tbsp lime juice (I recommend from a fresh lime but you can use the bottled stuff too)
  • 1/2 tsp salt

A note on the sweet potato fries

The key to meal prep is definitely taking a few shortcuts here and there. I'll usually buy pre-spiralized veggies at the grocery store or pre-chopped cauliflower rice, or peeled and diced butternut squash and sweet potato to save time with whatever I'm making. In this recipe, I've used frozen sweet potato fries. There are some surprisingly clean options at the grocery store, especially if you look in the natural foods section.

You can make your own sweet potato fries, but it will just take more time to peel and slice the sweet potatoes, then season them and toss them in oil. You're better off using a bag of frozen fries here.

More topping ideas

There are SO many ways to make these fries your own! Here are some more topping ideas:

Proteins Instead of, or in addition to black beans, you can add meats like ground beef, chicken or pulled pork. You can in theory also crumble up some tofu and season with taco seasoning to add more vegetarian protein. You can also use other legumes such as lentils, refried beans or chickpeas.

Vegetables Any veggie will go here! To make these fries even more tasty, you can saute bell peppers and red onions, but don't be afraid to get creative. Broccoli, avocado, red cabbage or diced tomatoes would work here too.

Cheese I've used mozzarella here, but cheddar or monterey jack would taste great too. If you're looking to save time, use a tex mex blend of pre-grated cheese.

Sauces You don't have to make this cilantro avocado sauce! You can make a pico de gallo or guacamole, or you can use a store bought salsa or salsa verde. Sour cream works well too, as well as chipotle mayo and hot sauce. There are so many options for delicious sauces!

Garnishes In addition to green onions, jalapenos (fresh or pickled) and cilantro, you can add other fresh herbs, lime wedges or other toppers like tortilla strips. Go nuts!

Storing and reheating

If you're looking to store leftovers, make sure you separate the fries and toppings for best results. You can reheat the fries in the oven for 5-10 minutes, then add all of your toppings fresh, and maybe even some more cheese if you're feeling it. Unfortunately you can't freeze this dish, but the leftovers will keep in the fridge up to 3 or 4 days.

  • 1 jalapeno, thinly sliced
  • 1/3 cup cilantro, chopped
