Today I’m excited to share a delicious favorite with you: zucchini noodles. If you’ve never tried them before, you’re in for a treat. The flavor is super and they are so quick and easy to make. They’re also extremely versatile with lots of topping options, making them an excellent choice for any lunch or dinner.
I first introduced to zucchini noodles when we started eating low-carb while doing the Keto diet. Zucchini noodles or “zoodles” became a staple in our menu. We are huge pasta lovers and I was craving the taste of my favorite noodles.
Once we started making zucchini noodles, that craving was satisfied. You’ll love this healthy alternative to spaghetti with almost no carbs.

What are Zucchini Noodles?
Zucchini noodles or “zoodles” are a perfect gluten-free, low-carb option instead of pasta.

You can make zucchini noodles lots of different ways. I love this Ultimate Spiralizer because there are several attachments and it’s so easy to make several styles of noodles.

Ingredients for Zucchini Noodles 4 medium to large zucchini 1-2 tsp salt Your favorite pasta sauce recipe Optional garnishes of grated parmesan or shredded parmesan, fresh basil
This will make four one-cup servings to enjoy.
How to Make Zucchini Noodles
Begin by gently washing and drying your zucchini.
Cut the end off of each zucchini — or per the instructions of your spiralizer if it tells you something different!
Spiralize your zucchini, then spread the spirals on a sheet pan and sprinkle with salt. The salt aids in the moisture removal from the zucchini so you don’t have soggy noodles. Let the noodles sit for 10-15 minutes. Then gently blot with a paper towel to remove the moisture and maintain the noodle shape.
You can eat the zoodles raw with warm pasta sauce if desired.
How to Cook
You can eat the zucchini noodles fresh and raw if you’d like, or you can try one of the many cooking methods available.
Cooking zucchini noodles is easy! There are lots of methods that you can try including steamed or roasted. You can quickly boil them as well. You could also try cooking them in an air fryer.
I like to do a quick saute in a skillet for about 2-3 minutes over medium heat. You don’t want to overcook them as they will get soggy. You can use one tablespoon of oil in the pan if desired.
Remove from the pan and season with salt and pepper as desired before serving.
I would suggest topping with your homemade tomato sauce, shredded Parmesan, and fresh basil.
What to do with Zucchini Noodles
I showed you how I like to top my zucchini noodles with homemade pasta sauce, but there are many other options as well. You can toss them with pesto, or serve with chicken or with shrimp. Shrimp is definitely a favorite for me! Pasta seafood is the best. 😉
You could make a lemon and garlic butter sauce to toss the noodles in. Top with Parmesan for a perfect flavor. You could also saute the zucchini noodles with some butter or oil and veggies to create a yummy stir fry.
I think you’ll find them to be delicious no matter how you serve them. Pair with a simple salad and you’ll have a tasty meal to enjoy in no time.
Can You Freeze Zucchini Noodles?
You can, however, be warned that the consistency and texture can really change once you thaw them out.
If you have more zucchini noodles than you can eat, I would suggest popping them into a freezer-safe bag or container.
When it’s time to use them, take them out and add them to a recipe while they’re still frozen.
You could add them to a soup or stir fry, or even in a smoothie.
